A person can squeeze grapes and then make Kiddush on it. (The Shaar Hatzion
say that this also alludes to making Kiddush before Shkiah, since it seems
that he made Kiddush right after squeezing the grapes.) The Magen Avraham
says that it is still best to make Kiddush on aged wine.  The proof to this is in the Halachas brought in Simon 600.

WINE THAT IS TURNING TO VINEGAR

The Rama says that if someone has wine that is turning to vinegar, if that wine has the taste of vinegar, even if it smells like wine, Kiddush cannot be made over it. The Bach asks why is this Halacha said concerning Kiddush?  In Hilchos Brachos we Paskin that even a Brocha Hagafen cannot be made over such wine.

MAKING HAVDALA OVER SMELLY WINE ETC.

Rav Akiva Eiger says, even though Kiddush cannot be made over wine having a bad smell, it would be permitted to make Havdala with it, since this wine is no worse than using beer. The Mishna Brura argues with this, saying that this wine is worse than beer, since the Pasuk of "if you serve this to an officer, would he accept it?" should apply to Havdala as well as Kiddush. So although one may use beer which has a naturally pungent taste associated with it, bad smelling wine is worse, since there is something intrinsically wrong with it.
