COVERING THE BREAD WHEN STOPPING TO MAKE KIDDUSH

We already said that if someone was eating a meal on Erev Shabbos and it becomes dark, the bread is covered and Kiddush is made. The Magen Avraham explains that this is done in order to give the appearance that the bread is coming in honor of Shabbos (since it is covered until after Kiddush, then uncovered). By uncovering the bread after Kiddush, it is as if it was brought to the table at that time, and in doing so demonstrates that it is specially being brought for the honor of the Shabbos meal.

STOPPING IN MIDDLE OF A MEAL TO MAKE KIDDUSH

If someone was eating a meal Erev Shabbos and it suddenly becomes Shabbos at nightfall, it is not necessary to stop the meal, Bentch, remove the tables (in the days where tables where small and moveable), then start a whole new meal for Shabbos. Rather, you temporarily stop eating, cover the bread and make Kiddush.

DRINKING WATER BEFORE KIDDUSH

The Gemara permits drinking water before Havdalah (though other foods and drinks are forbidden.) The Magid Mishna says that according to the Shita of the Rambam the same Halacha applies to Kiddush. He notes the Rashba who disagrees, who brings a proof from a Yerushalmi that it is forbidden to drink water before Kiddush. The Bais Yosef understands the Rambam to agree with the Rashba, thus according to this understanding, it would be forbidden to drink water before Kiddush.
